What are your allergy procedures?

There are a lot of procedures, good manufacturing practices too. It begins with storage. The goods come in, they have to be separated and stored separately. Allergens can't be stored over, you know, ordinary food, right? No almonds over lettuce, that kind of thing. And then, when we take them out, it's sort of the same thing, right? You take out the things that are allergens, you gotta have gloves, you gotta wash your hands every time you switch to touching another ingredient or product. Before you do that, you gotta wash your hands, change your gloves, change your apron. A new apron after working with allergens. That's pretty much the basics. Keeping ingredients separated and making sure that after you touch the ingredients, wash your hands, change your apron, new gloves.
